For St. Patrick’s Day, to compliment green beer and Irish car bombs is some good old cheesecake. Yup that’s right!
Except this one’s called the “Bit-of-Irish Cheesecake” and it is oh so good you’ll be dying for more (if you haven’t passed out already).
I gave it a try and it is the perfect St. Patrick’s Day dessert. So take down this recipe I used from online at Kraft Recipes and eat your heart out!!!
What you need:
1-1/2 cups finely chopped PLANTERS Pecans
2 Tbsp. sugar
3 Tbsp. butter or margarine, melted
4 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1 cup sugar
3 Tbsp. flour
1 cup BREAKSTONE’S or KNUDSEN Sour Cream
1/4 cup Irish cream liqueur
4 eggs
How to make it:
HEAT oven to 325°F.
MIX nuts, 2 Tbsp. sugar and butter; press onto bottom of 9-inch springform pan. Bake 10 min.
BEAT cream cheese, 1 cup sugar and flour in large bowl with mixer until well blended. Add sour cream and liqueur; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust.
BAKE 1 hour 5 min. or until center is almost set. Run knife around rim of pan to loosen cake; cool before removing rim. Refrigerate 4 hours.
As seen in the picture: Sprinkle some green sprinkles in the shape of a four leaf clover on the top of the cake!
